Coffee and Walnut CakeEveryone loves a coffee and walnut cake, and these little cupcakes are a real favourite with our guests at Inverglen. If you need to cater for a dairy free diet, just substitute the butter for a dairy free spread – I use a Sunflower Oil Spread which works perfectly and I omit the cream in the buttercream. You can also make these into delicious mocha cupcakes by substituting one tablespoon of flour for a tablespoonful of cocoa powder and adding chocolate chips instead of the walnuts.


175g unsalted butter, softened

175g  caster sugar

175g self raising flour, sifted

3 large eggs, beaten

1 tablespoon coffee powder dissolved in 1 teaspoonful boiling water and allowed to cool

50g chopped walnuts

Buttercream Icing

150g unsalted butter, softened

2 tablespoons cream

300g icing sugar, sifted

1 tablespoon coffee powder dissolved in 1 teaspoonful boiling water and allowed to cool

Walnut halves or chocolate coffee beans to decorate


Preheat oven to Gas Mark 4, 180C and line a 12 hole muffin tin with papers.

Put the butter and caster sugar in a large bowl, and beat until light and fluffy. Whisk in the eggs and add the coffee mixture last.

Gradually fold in the sifted flour until mixed through, then fold through the chopped walnuts.

Put equal spoonfuls of the mixture into the paper cases, and bake in the centre of a pre-heated oven for 15-20 minutes, or until risen and firm to the touch. A toothpick inserted into the centre of the cake should come out clean.

Remove from the baking tin, and leave to cool on a wire rack.

To make the icing, beat the softened butter with an electric whisk for 2-3 minutes until pale and fluffy. Add the coffee mixture and whisk through.

Gradually add the sifted icing sugar and cream, and whisk when combined until the buttercream is light and fluffy (best to stir in the icing sugar and cream first, then whisk!)

Put the buttercream into an icing bag, and pipe swirls or stars onto the top of your cupcakes as desired. Decorate each cake with a walnut half or chocolate coffee beans to serve.
